Lettuce Wrap Burgers with Caramelized Onions and Blue Cheese

These lettuce wrap burgers are my new favorite burger! Melty blue cheese burgers topped with tons of caramelized onions, a drizzle of creamy honey mustard all wrapped in a lettuce cup. Refreshing, satisfying and crisp!

Let me tell you how I’m officially OLD.

I love these lettuce wrap burgers.

Like, LOVE THEM. Blue cheese burgers piled high with caramelized onions, drizzled with creamy honey mustard and served in lettuce wraps. Freaking delicious.

I just adore them!

A few years ago, you couldn’t have paid me to eat a burger wrapped in lettuce. 

And trust me, this is nothing about cutting out the bun or the bread. Has nothing to do with that. It’s all about the CRISP LETTUCE.

Refreshing, crisp iceberg lettuce that we all usually treat like garbage. You know? We say it tastes like stale water and is worthless in a salad.

But as a wrap? TOP NOTCH. It is supreme. 

Sure, we kind of already know this from lettuce wrap – the famous ones with the sesame chicken and all that.

But lettuce wrap burgers are the one way I have always avoided using the lettuce… thinking it would be too messy, not sturdy enough and just not as… good? Sort of like a give me brioche or give me death situation. Nothing can beat the brioche bun. 

However, it was definitely my cheeseburger salads that started to change my mind a few years ago. Something about the crisp lettuce is part of that classic cheeseburger flavor – mixed with the cheddar and the ketchup and the mustard and oh! It’s fabulous.

So I started making cheeseburger lettuce wraps. Dreamy. And so easy. The lettuce wraps add this cooling, refreshing bite on a hot summer day.

Now here is why THESE burgers are the best: 

They are topped with blue cheese which gets extra melty. 

Caramelized onions, which we know make every burger better.

And a drizzle of creamy homemade honey mustard! 

All wrapped up in that cold iceberg lettuce leaf. Juicy as heck, melty with cheese, so flavorful I could scream.

The key with these burgers is making them how YOU like them. Add as much blue cheese as you’d like. Or heck, use cheddar. I will use one or two pieces of lettuce, depending on the size of the leaves and the size of the burgers. Make the burgers smaller or large, based on your preference. 

Add as many caramelized onions on top as you wish! Drizzle with honey mustard or use another condiment of your choice. There is no wrong way here and that’s the exciting part. This is more of a guide of how to make a delicious caramelized onion burger in a lettuce wrap. Yum yum yum.

Lettuce Wrap Blue Cheese Burgers with Caramelized Onions

Lettuce Wrap Blue Cheese Burgers with Caramelized Onions

These lettuce wrap burgers are my new favorite burger! Melty blue cheese burgers topped with tons of caramelized onions, a drizzle of creamy honey mustard all wrapped in a lettuce cup. Refreshing, satisfying and crisp!

  • 4 large sweet onions, thinly sliced
  • 4 tablespoons butter
  • kosher salt and pepper
  • 1 pound lean ground beef
  • crumbled blue cheese, for topping
  • 1 head iceberg lettuce, leaves pulled off and washed
  • 2 to 3 tablespoons chopped fresh chives, for topping
  • Heat the butter in a large skillet over medium heat. Once melted, stir in the onions with a big pinch of salt and pepper and the thyme. Cook for 10 to 12 minutes, stirring often, until the onions begin to soften. Turn the heat down to low and cook, stirring often, until the onions are dark brown and caramely, anywhere from 1 to 2 hours, or until the onions reach the color you desire.

  • This will take a while and the onions are apt to burn. Keep an eye on them and stir often, reducing the heat when needed. Add a splash of water to the pan if it gets too dry at any time.

  • To make the burgers, season the ground beef well with salt and pepper. Divide the beef into 4 or 6 patties – depending on how large you want them. It’s up to you! I prefer a thinner patty, so I usually make 6 thinner burger patties.

  • You can use the same skillet you cooked the onions in or use a new one. Heat the skillet over medium heat and add a small drizzle of olive oil if needed. Add the burger patties and cook until deeply golden. Flip the burger. Top with a few spoonfuls of the crumbled blue cheese (as much as you’d like!) and let the other side brown and the cheese melts.

  • Serve the burgers on the lettuce cups. Depending on the lettuce, I will use 1 or 2 pieces per burger. Top each burger with caramelized onions. Drizzle on the honey mustard and sprinkle on the chives. Serve!
